Apparently there's a rather large portion of players on GuildWars that like to have the most popular build.
Such as:
Trapper
Spike Ranger
Since this "smiter ele" craze which perhap helped boost the active percentage of eles by a rather large on the server is over, any incentive to play them sort of died accordingly. ( only if your that sort of player O.o )
Now we're starting to see a rise in trapper rangers and spiker rangers. Becaaaauuusee... trapper rangers and ranger spike is well. Yeah. Stuff.

Come on people, just get yourself a second account, or third, fourth, fifth, etc., I kid you not. Maybe you want to try every class combination possible, you would need multiple accounts to do that without deleting characters, and you always need something to spend your entertainment dollars on.

You make it sound as if all of us HAVE "entertainment dollars" to spend.

Yeah, basically, anyone who says "I've noticed xyz happens all the time," you can pretty much disregard it. Very few people take enough data on an event for their data to be considered anywhere near conclusive.

I remember when there was no rune trader, my ele was like one of the only ones in GW to have superior fire, in the first weekend of GW. Those were the days >:]

This is something that has been perplexing me. Looking at each class...
Warrior - Once you go through the game with your warrior, is their really a purpose to having him/her other than to farm? Or just the satisfaction of hacking and slashing later? By far has the coolest equipment...
Ranger - Fun for the utility of the profession and its flexibility. Being a beast master, trapper, archer, etc...seems like this would be a class you would like to keep.
Elementalist - Nice because of the multiple specialties this class can take, but in the end it is a damage dealer first and foremost. Once you get past the "utter destruction" syndrome, it seems like this would be a prime candidate for elimination.
Monk - By far one of the highest classes in demand, and can also convert to a farmer. Seems like this would be really hard to eliminate, especially for those of us in guilds.
Mesmer - The ultimate force in GvG and PvP, I would have a hard time eliminating this character. It's also one of the biggest challenges to have this character plod its way through PvE.
Necro - One of the hardest characters to master, it seems like the Necro would be the funnest to play. I personally haven't started one, but this will probably be on next on my list.
So, in the end, I think you're right - the elementalist and the warrior are the two professions most likely to be eliminated by the most experienced players. The overabundance of these seems to lend itself to that eventual place as well.

I deleted my lvl20 mo/w to create my new ele. I was too pissed about all the nerfs to the smiter but I still have all my sup monk runes just in case.

I would say that most people's first character may have been Elementalist. So, they may have deleted it in favor of playing another PvE character to help expedite unlocking. Alternatively, they may still have the character, but just not be playing it.

I have tried all characters except for a ranger, and I am not sure on which character to delete, my Ele or necro but I am leaning to my necro because the Ele is a fun character to use for Uw or FoW.

Uhh, so my ele was my third char., and I have loved it so much, I never even got around to creating a 4th! Ele's can do so much, and do it all so well. Lately, I've been perfecting an invincible farming/running build. All the elements are unique and fun. You can easily do some of the highest damage in the game, and also be one of the best tanks, without even touching a secondary. Anyone who thinks ele's are all the same or are too streamline as nukers have not experienced the true greatness that is the elementalist.

I just deleted my level 20 Elementalist/Monk, all 15k armour sets, FoW Armour set, completed every quest and unlocked every skill....
Why did I delete him? To make this topic more accurate...

Man, why is it everyone loves geomancers now? Back in the day when I went through the whole game with my geomancer, I was mostly called "the not-nuker," and frequently kicked from parties because I wasn't fire.
Anyway, my elementalists will never die!
